Asian Slaw a la Bella

I don’t know about you but during the winter months, I am always craving some type of slaw. This year, I decided to go back to my roots and make something with a little Asian flare. If you know me, my favourite cuisine is Italian so my go-to dishes aren’t typically Asian. But when you’re body is craving something, you’ve got to listen to it! Hence, the creation of this simply delicious recipe! I called 2018 the year of “SIMPLICITY,” so I am trying to simplify my recipes for the average home cook! I hope this recipe is easy enough for you! 

Because this recipe is simple does not mean that it isn’t tasty or nutritious! When I create a recipe, I not only think about what’s in season but also the flavour profile of each ingredient and how they all mingle with each other to increase nutrient content. For the dressing, instead of rice wine vinegar, I used apple cider vinegar. As most of you know, it is great for digestion! I used avocado for some healthy fats and orange juice for the extra zing and vitamin C. I also added ginger for it’s anti-inflammatory benefits. With a little stevia to balance out all the flavours, this super easy dressing is a sure hit!

Ingredients
  1. 1/2 small cabbage, cored and shredded
  2. 4 medium carrots, julienned or shredded
  3. 1 small bulb fennel, tops removed, cored and julienned
  4. 2 cups peashoots,
  5. 1 cup frozen edamame, defrosted
Optional Garnish
  1. 1/2 cup roasted salted cashews
  2. 1/4 cup green onions, sliced on a bias
For the Dressing
  1. 1/3 cup freshly squeezed orange juice
  2. 1 tsp apple cider vinegar
  3. 1 1/2 tsp grated ginger
  4. 1 1/2 scoops NOW better stevia
  5. 1Tbsp toasted sesame oil
  6. 1/3 cup avocado oil
  7. pinch himalayan sea salt
Instructions
  1. Prep all veggies as stated and place in a mixing bowl. Set aside.
  2. Make the dressing by placing all the ingredients in a mason jar and shaking it up!
  3. Pour the dressing over the salad and toss until all the veggies are covered in dressing.
  4. Plate in bowls and garnish with roasted cashews and green onions if desired. Enjoy! 🙂

Stevia is small perennial herb from South America and southwestern regions of North America. It is a natural sweetener known as “nature’s sweet secret.” It has grown in popularity over the years and can now be seen used in many protein powders and power bars. It’s a great alternative to table sugar (refined sucrose) and other artificial sweeteners. Great on desserts, coffee and savoury foods as well!
