At least once a year, everyone should take a vacation. It gives the body, mind, and soul time to relax, unwind, and just be in the moment. Having only two concerns: what to eat and what to do. It’s the perfect time to get inspired and get to know yourself again. Sometimes, we get so busy in our day to day activities that we forget who we are or neglect to see how far we’ve come.
Recently coming home from vacation (I will blog about that some other time), I had time to do just that. I rediscovered myself and felt inspired again. This vacation was much needed as I had a very rough 2018. Now that I am back to regular life, not only have I been feeling inspired but I have also been feeling very very very COLD! (LOL 😝). I was so cold that I was literally shivering for what felt like hours! Coming from sunny weather of 30°C to -4°C, my body was not ready for all this snow!
So what did I do? I was smart enough to have pre-frozen some meals for myself prior to leaving so I defrosted and warmed it up. The first night I had beef stew and the next day, I had salmon chowder. (Meal Prep to the rescue!) All warming foods for this cold February weather that I was not expecting to come home to.
Today, I finally had the time to create that PB Hot Cocoa I have been talking about since Christmas so I’m sharing it with you! Use it as a treat to warm yourself up or get cozy and share it with your Valentine! ❤️
PB Hot Cocoa
In a mixing bowl, whisk all the ingredients together until well combined.
Store in a mason jar and use when craving hot cocoa.
In a pot, heat almond coconut milk until hot. Do not overboil.
Add cocoa mix and vanilla. Whisk until well combined.
Pour onto your favourite mug and drink on its own or garnish with coconut whip. Enjoy!
