Bella Chicken Tacos

It’s almost Cinco de Mayo! What better way to celebrate than with some Chicken Tacos! My taco obsession started four years ago when my pastor’s wife treated me out to Chipotle. You see, my pastors were from Texas and Chipotle is super popular over there! I bit into that chicken taco and the rest was history! Been making Chicken Tacos for friends, family and co-workers since then. Don’t let the length of this recipe keep you from making your own taco! Each recipe is super easy and can be made into Taco Salad Bowls too! I hope you enjoy it as much as I do!

Bella Chicken Tacos

  1. 12 taco shells
  2. 1⁄2 romaine lettuce, chiffonade
  3. 1⁄4 red cabbage, sliced thin
  4. 2 chicken breast
  5. 2 Tbsp taco seasoning
  6. 1 recipe salsa
  7. 1 recipe guacamole
Optional Garnish
  1. Pickled Red Onions (recipe below)
  2. Picked Jalapeños
Taco Seasoning
  1. Yield 1/3 cup
  2. 2 Tbsp chili powder
  3. 1 Tbsp ground cumin
  4. 1 Tbsp ground coriander
  5. 2 tsp smoked paprika
  6. 1 tsp garlic powder
  7. 1 tsp onion powder
  8. 1 tsp chili flakes
  9. 1 tsp sea salt
  1. Yield 1 cup
  2. 2 ripe avocado
  3. 1 Tbsp chopped cilantro
  4. 1 Tbsp red onion, small dice
  5. Juice of 1/2 a lime
  6. Juice of 1/2 a lemon
  7. TT sea salt
  1. Yield 2 cups
  2. 4 vine ripened tomatoes, med dice
  3. 1⁄4 cup red onion, small dice
  4. 2 cloves garlic, minced
  5. 1⁄2 cup chopped cilantro
  6. 2 Tbsp small diced jalapeño
  7. 1 Tbsp olive oil
  8. Juice of 1/2 a lime
  9. Juice of 1/2 a lemon
  10. TT sea salt
Pickled Red Onions
  1. Yield 1 cup
  2. 1 medium red onion, sliced
  3. 2 Tbsp apple cider vinegar
  4. TT sea salt
  1. Marinade the chicken breast with taco seasoning for 2 hours or overnight. Grill or Bake the chicken breast at 400°F for 15-20 minutes or until cooked through. Slice the chicken breast into bite size pieces.
  2. Layer taco shells as follows: romaine lettuce, red cabbage, chicken breast, guacamole, salsa, pickled onions and jalapeños.
For the Taco Seasoning
  1. Place everything in a jar.
  2. Tightly close the lid of a jar and shake until everything is mixed well.
For the Guacamole
  1. Place avocados in a bowl. Mash with a fork or a potato masher.
  2. Add all the other ingredients and mix until all are incorporated.
  3. For storing, cover with saran wrap. Press saran wrap onto the surface of the guacamole tightly as not to get any air in. This will keep it from browning.
For the Salsa
  1. Mix all ingredients in a bowl.
  2. Let sit and mingle so that the flavours all collide.
For the Pickled Red Onion
  1. In a small pot, place all ingredients together.
  2. Cook on medium heat until red onion has absorbed all of the apple cider vinegar.
  3. Season with salt to taste. Let cool and enjoy!
  1. Steak, prawns, cod or roasted cauliflower can be substituted for chicken
  2. For a gluten-free option, use Butter Lettuce instead of Taco Shells
  3. To make into Taco Bowls, simple omit the shells and place all the ingredients on top of brown rice and black beans! 🙂
